Pancakes
Ingredients:
- 1 cup flour
- 1 Tbsp. sugar
- 1 tsp. baking soda
- ½ tsp. salt
- 1 egg
- 1 cup buttermilk
- 2 Tbsp. oil
Instructions:
- In medium size mixing bowl, mix flour, sugar, soda, and salt together.
- In separate bowl, mix egg, buttermilk, and oil together.
- Pour egg mixture over flour mixture.
- Beat with a whisk just until blended.
- Spray large skillet with non-stick spray.
- Heat skillet on medium.
- Using a ½ cup measuring cup or a ladle, fill with the batter.
- Pour onto heated skillet.
- Cook for about 2-3 minutes on the first side.
- Using a pancake turner, flip to the other side and cook about 1-2 minutes.
- Remove pancake to a plate.
- Pour batter onto skillet for the second pancake letting it cook for 1-2 minutes and flip.
- Repeat the cooking and flipping process until the batter is gone.
- Serve with butter, syrup or fruit.
