Fig Date Bread Suhoor
Ingredients:
- 1 cup boiling water
- 1 cup chopped pitted dates
- 1 cup chopped dried figs
- ¼ cup butter, softened
- 1 ½ tsp. baking soda
- ½ cup sugar
- ½ cup chopped almonds
- 2 eggs
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- ½ tsp. baking powder
- ½ tsp. salt
Instructions:
- Preheat oven to 350 degrees.
- Spray loaf pan with non-stick spray.
- In medium mixing bowl, combine dates, figs, butter, baking soda.
- Stir in boiling water.
- Let stand for 15 minutes.
- Add sugar, almonds, eggs.
- In separate mixing bowl, combine flour, baking powder, salt.
- Stir into date mixture just until blended.
- Pour batter into pan.
- Bake for 55-65 minutes or until toothpick inserted into center comes out clean.
- Cool 10 minutes.
- Turn out onto cooling rack to cool completely.
