Belgian Waffles

Instructions:

  1. Spray inside of Belgian waffle iron with non-stick spray.
  2. Preheat waffle iron by plugging it in with it closed.
  3. In large mixing bowl, combine:
    • 2 cups flour
    • 1 Tbsp. plus 1 tsp. baking powder
    • 1 Tbsp. sugar
    • ½ tsp. salt
  4. In small mixing bowl, combine:
    • 2 eggs, beaten
    • 1 ½ cups milk
    • ¼ cup oil
  5. Add milk mixture to egg mixture.
  6. Beat with whisk or electric mixer on low, just until beaten.
  7. Scoop about ½ to ¾ cup of batter onto waffle iron.
  8. Bake for about 5 minutes.
  9. Repeat with remaining batter.
  10. Serve with sliced strawberries and powdered sugar if desired.

Yield: 5-6 waffles
