Eggs A La Mexico
Ingredients:
- 3 Tbsp. butter, margarine or olive oil
- 3 Tbsp. chopped onion
- 3 Tbsp. chopped green or red pepper
- 3 Tbsp. butter, margarine or olive oil
- 6 eggs
- 6 corn or flour tortillas, torn into small pieces
- 1 can Rotel diced tomatoes and green chilies
- ½ lb. bacon, cooked and crumbled
- 3 cups grated Cheddar cheese
Instructions:
- Saute onion and pepper in 3 Tbsp. melted butter. Set aside.
- Cook Scrambled eggs in 3 Tbsp. melted butter. Set aside.
- In 9×9-inch baking pan, make layers using half of the ingredients in each layer, in order as follows:
- Onion and red pepper
- Tortillas
- Tomatoes and green chilies
- Scrambled eggs
- Bacon pieces
- Cheese
- Cover and bake at 350 degrees for 30 minutes.
