Breakfast Tacos with Meat
Instructions:
- Wrap 2 flour tortillas in a paper towel and set aside.
- In small mixing bowl, beat 2 eggs and set aside.
- In small skillet, cook bacon pieces or sausage or chorizo until done.
- Add beaten eggs.
- Stir with a wooden spoon or wooden paddle.
- Cook until eggs begin to become firm.
- Turn off heat.
- Remove from burner to a cool burner or a cooling rack.
- Heat tortillas in microwave for 30 seconds.
- Place about 2 spoonfuls on scrambled eggs on each tortilla.
- Top with grated Cheddar cheese.
Yield: 2 tacos
