Pumpkin Bread
Ingredients:
- 2/3 cup shortening
- 2 2/3 cups sugar
- 4 eggs
- 1 can pumpkin
- 2/3 cup water
- 3 cups flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 2/3 cup chopped nuts
- 2/3 cup raisins (optional)
Instructions:
- Heat oven to 350 degrees.
- Cream shortening and sugar together.
- Add eggs, pumpkin and water.
- Blend in dry ingredients, mix well.
- Stir in nuts and raisins, if desired.
- Bake in 2 well-greased loaf pans for 1 hour and 10 minutes.
Yield: Makes 2 loaves
For Muffins:
- Heat oven to 400 degrees.
- Follow directions 1-5.
- Grease muffin pan or line with paper liners.
- Scoop batter into muffin cups, an ice cream scoop works well.
- Bake for 18-20 minutes.
Yield: about 24 muffins
