Potato and Mushroom Chowder (Crock Pot)
Ingredients:
- ½ cup onion, chopped
- ¼ cup butter or margarine
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cups water
- 1-8 ounce package sliced mushrooms
- 1 cup celery, chopped
- 3 cups diced, peeled potatoes
- 1 cup carrots, chopped
- 3 cups milk
- 1/2 cup grated Parmesan cheese
Instructions:
- In a skillet, sauté onion and celery in the ¼ cup butter until the onion is translucent.
- Remove from heat.
- Add flour, salt, and pepper; stir.
- Place in Crock Pot.
- Add water.
- Stir in potatoes, carrots and mushrooms.
- Cover and cook on Low 6-8 hours.
- Turn to High; add milk and cheese then cook another 30 minutes.
