Unwrap sausage and pull apart into quarter-size pieces. Brown pieces on grill 2 to 3 minutes or until fully cooked. Remove from grill, crumble or chop into small pieces and set aside. If you choose to slice sausage into patties, be sure to grill them 5 to 7 minutes instead.
Mix cream cheese with cayenne pepper and cumin, if desired, in small bowl.
Spread cream cheese mixture evenly over 6 tortillas, leaving a 1-inch border.
Sprinkle sausage, cheese, chilies and corn evenly over the 6 tortillas. Top with remaining tortillas; press down.
Carefully scrape or wipe grill clean. Grill one quesadilla 2 to 3 minutes until browned and cheese is melted. Remove from grill and repeat the grilling process with remaining quesadillas. Cut each quesadilla into wedges 8 wedges and serve immediately.
