1 PACKAGE JIMMY DEAN regular Flavor Fresh Pork Sausage
3 cups frozen shredded hash browns, thawed
⅓ cup minced green onion
½ cup shredded Cheddar cheese
1 teaspoon chili powder (optional)
2 tablespoons chopped parsley (optional)
Salt and black pepper
2 eggs, lightly beaten
Preheat grill 5 minutes.
Unwrap sausage and pull apart into quarter-size pieces. Brown pieces on grill 2 to 3 minutes or until no longer pink. Remove from grill, crumble or chop into small pieces; set aside. (Alternately, slice sausage into patties; grill 5to 7 minutes. Remove patties from grill and chop into small pieces.)
In medium bowl combine sausage, hash browns, onion, cheese, chili powder and parsley, if desired. Season with salt and black pepper to taste. Stir in eggs and blend well.
Pour mixture onto grill, spreading evenly to cover entire grilling surface ½-inch thick. (Depending on grill size, recipe may need to be grilled in two batches. Do not overfill grill.) Brush top of sausage-potato mixture with vegetable oil.
Grill 10 to 12 minutes until golden brown. Side off grill onto cutting board or platter. Repeat if needed.
