Gingerbread
Ingredients:
- 1 cup flour
- 1 tsp. baking soda
- 1/4 tsp. ground ginger
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 cup packed brown sugar
- 1/4 cup molasses
- 1/4 cup water
- 2 Tbsp. lemon juice
Instructions:
- Heat oven to 350 degrees.
- In large mixing bowl, combine flour, baking soda, ginger, cinnamon, nutmeg.
- In small mixing bowl, mix together brown sugar, molasses, water, lemon juice.
- Stir liquid mixture into flour mixture just until blended.
- Immediately pour into lightly greased 8-inch square cake pan.
- Bake 20 minutes.
Lemon Sauce
Ingredients:
- 1/4 cup sugar
- 1 Tbsp. cornstarch
- ½ tsp. finely grated lemon peel
- 1/8 tsp. nutmeg
- 3/4 cup water
- 2 Tbsp. lemon juice
Instructions:
- In saucepan, combine sugar, cornstarch, lemon zest, nutmeg.
- Add water.
- Cook, stirring constantly, until mixture is bubbly.
- Add lemon juice.
- Serve over warm gingerbread.
