Creole Eggs



  1. In large skillet, saute oil, sausage, garlic powder, cayenne pepper and onion for 3-5 minutes.
  2. Add tomato, green pepper, water and black pepper.
  3. Cook until most of moisture is evaporated.
  4. In small mixing bowl, beat eggs together.
  5. Pour beaten eggs over sausage mixture.
  6. Stir over very low heat, until done.

Yield: 2 servings
