Creole Eggs
Ingredients:
- 1 tsp. oil
- ¼ lb. smoked sausage, sliced
- ¼ tsp garlic powder
- Pinch of cayenne pepper
- ¼ cup onion
- ¼ cup chopped fresh tomato
- ¼ cup sliced green bell pepper
- 3 Tbsp. cold water
- Pinch of black pepper
- 3 eggs
Instructions:
- In large skillet, saute oil, sausage, garlic powder, cayenne pepper and onion for 3-5 minutes.
- Add tomato, green pepper, water and black pepper.
- Cook until most of moisture is evaporated.
- In small mixing bowl, beat eggs together.
- Pour beaten eggs over sausage mixture.
- Stir over very low heat, until done.
