Chilled Strawberry Soup
This is delicious!
Ingredients:
- 2 (10-oz.) pkg. frozen strawberries, thawed
- 1 ½ cups water
- 1 cup cranberry juice
- ¾ cup sugar
- 1 cinnamon stick
- 3 whole cloves
- 1 Tbsp. lemon juice
- 1 (8-oz.) carton strawberry yogurt
- ⅓ cup sour cream
- Cinnamon
Instructions:
- Place strawberries and ¼ cup of the water in blender container.
- Blend until smooth.
- In large saucepan, combine fruit, remaining 1 ¼ cups water, juice, sugar, cinnamon stick and cloves.
- Cook over medium heat until mixture begins to boil.
- Remove from heat and cool.
- Add lemon juice and yogurt and stir with a whisk.
- Cover and refrigerate several hours.
- Pour into individual serving bowls.
- Top with sour cream and sprinkle with cinnamon.
Makes 4 servings.
