Breakfast Tacos with Meat


  1. Wrap 2 flour tortillas in a paper towel and set aside.
  2. In small mixing bowl, beat 2 eggs and set aside.
  3. In small skillet, cook bacon pieces or sausage or chorizo until done.
  4. Add beaten eggs.
  5. Stir with a wooden spoon or wooden paddle.
  6. Cook until eggs begin to become firm.
  7. Turn off heat.
  8. Remove from burner to a cool burner or a cooling rack.
  9. Heat tortillas in microwave for 30 seconds.
  10. Place about 2 spoonfuls on scrambled eggs on each tortilla.
  11. Top with grated Cheddar cheese.

Yield: 2 tacos
