Aunt Helen’s Memorial Beans
p.51 The Only Texas Cookbook
Ingredients:
- 1 large can (1 lb.,12 oz.) pork and beans (pick a good brand-this is no time to go for the cheap stuff)
- 2 slices bacon, chopped
- 1 green pepper, chopped
- 1 small onion, chopped
- 1 tbsp. brown sugar
- 1 tsp. chile powder
- ½ cup ketchup
- ½ cup water
- 1 small jalapeno, chopped fine
Instructions:
- Mix and bake in a 1 ½ quart casserole dish, uncovered, in a slow oven (325 degrees) for 3 hours.
- Stir often.
Serves 6.
