Ingredients:

  • ½ cup onion, chopped

  • ¼ cup butter or margarine

  • 2 tablespoons all-purpose flour

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 3 cups water

  • 1-8 ounce package sliced mushrooms

  • 1 cup celery, chopped

  • 3 cups diced, peeled potatoes

  • 1 cup carrots, chopped

  • 3 cups milk

  • 1/2 cup grated Parmesan cheese

Instructions:

  1. In a skillet, sauté onion and celery in the ¼ cup butter until the onion is translucent.

  2. Remove from heat.

  3. Add flour, salt, and pepper; stir.

  4. Place in Crock Pot.

  5. Add water.

  6. Stir in potatoes, carrots and mushrooms.

  7. Cover and cook on Low 6-8 hours.

  8. Turn to High; add milk and cheese then cook another 30 minutes.
