  • 1-2 teaspoons vegetable oil

  • 2 cups cold cooked rice

  • 1 tablespoon soy sauce

  • ½ teaspoon salt

  • 1 egg, slightly beaten

  • ¼ cup chopped green onion


  1. Heat oil in large skillet or wok.

  2. Add rice, soy sauce and salt; cook, stirring constantly over moderate heat until cooked through.

  3. Mound rice mixture and make a “well” in the center.

  4. Lower heat.

  5. Pour eggs into the “well”. Allow to stand until the eggs are softly set. Gently stir into rice.

  6. Sprinkle with green onion and serve at once.

Makes 4 ½ -cup servings.
