Ingredients

  • 1 can 20 (ounces) Dole pineapple chunks
  • 1/3 cup bottled barbecue sauce
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 1 red or green bell pepper, cut into cubes
  • 1 zucchini, sliced

Instructions:

  1. Soak wooden skewers in water (20 minutes).
  2. Preheat grill 5 minutes.
  3. Drain pineapple; reserve 2 tablespoons juice.
  4. Stir together reserved juice and barbecue sauce in small bowl; set aside.
  5. Thread pineapple chunks, chicken, bell pepper and zucchini onto skewers.
  6. Grill kabobs 2 minutes. Open lid and brush kabobs with barbecue sauce, on all sides. Grill 1 minute more or until chicken is no longer pink in center. Heat remaining barbecue sauce in saucepan or microwave until hot. Serve barbecue sauce with kabobs. Serve with coleslaw and green beans, if desired.
