Holiday Banana Nut Bread
Ingredients:
- 1 ½ cups flour
- 1 tsp. baking soda
- 1 cup sugar
- 2 eggs, beaten
- ½ cup (1 stick) butter
- 1 cup mashed ripe bananas
- ½ cup chopped pecans, if desired
- 1/4 cup coconut, if desired
Instructions:
- Heat oven to 350 degrees.
- Combine flour, baking soda, sugar.
- Set aside.
- In separate bowl, combine beaten eggs, butter, bananas.
- Add flour mixture, stirring just until moistened.
- Fold in chopped pecans and coconut (optional).
- Bake 1 hour or until wooden tooth pick inserted in center comes out clean.
- Cool in pan 10 minutes.
- Remove from pan, and cool completely on wire rack.
Yield: 1 loaf
