Ingredients:

  • 1 ½ cups flour
  • 1 tsp. baking soda
  • 1 cup sugar
  • 2 eggs, beaten
  • ½ cup (1 stick) butter
  • 1 cup mashed ripe bananas
  • ½ cup chopped pecans, if desired
  • 1/4 cup coconut, if desired

 

Instructions:

  1. Heat oven to 350 degrees.
  2. Combine flour, baking soda, sugar.
  3. Set aside.
  4. In separate bowl, combine beaten eggs, butter, bananas.
  5. Add flour mixture, stirring just until moistened.
  6. Fold in chopped pecans and coconut (optional).
  7. Bake 1 hour or until wooden tooth pick inserted in center comes out clean.
  8. Cool in pan 10 minutes.
  9. Remove from pan, and cool completely on wire rack.

 

Yield: 1 loaf
