Ingredients:

  • 1 cup flour
  • 1 tsp. baking soda
  • 1/4 tsp. ground ginger
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 cup packed brown sugar
  • 1/4 cup molasses
  • 1/4 cup water
  • 2 Tbsp. lemon juice

Instructions:

  1. Heat oven to 350 degrees.
  2. In large mixing bowl, combine flour, baking soda, ginger, cinnamon, nutmeg.
  3. In small mixing bowl, mix together brown sugar, molasses, water, lemon juice.
  4. Stir liquid mixture into flour mixture just until blended.
  5. Immediately pour into lightly greased 8-inch square cake pan.
  6. Bake 20 minutes.

 

Lemon Sauce:

Ingredients:

  • 1/4 cup sugar
  • 1 Tbsp. cornstarch
  • ½ tsp. finely grated lemon peel
  • 1/8 tsp. nutmeg
  • 3/4 cup water
  • 2 Tbsp. lemon juice

Instructions:

  1. In saucepan, combine sugar, cornstarch, lemon zest, nutmeg.
  2. Add water.
  3. Cook, stirring constantly, until mixture is bubbly.
  4. Add lemon juice.
  5. Serve over warm gingerbread.
