Ingredients: 

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 1 can pumpkin
  • 2/3 cup water
  • 3 cups flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 2/3 cup chopped nuts
  • 2/3 cup raisins (optional)

Instructions:

  1. Heat oven to 350 degrees.
  2. Cream shortening and sugar together.
  3. Add eggs, pumpkin and water.
  4. Blend in dry ingredients, mix well.
  5. Stir in nuts and raisins, if desired.
  6. Bake in 2 well-greased loaf pans for 1 hour and 10 minutes.

Yield:       Makes 2 loaves

For Muffins:

  1. Heat oven to 400 degrees.
  2. Follow directions 1-5.
  3. Grease muffin pan or line with paper liners.
  4. Scoop batter into muffin cups, an ice cream scoop works well.
  5. Bake for       18-20 minutes.

Yield:       about 24 muffins
