Ingredients:

 

  • 1 cup flour
  • 1 Tbsp. sugar
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 egg
  • 1 cup buttermilk
  • 2 Tbsp. oil

Instructions:

  1. In medium size mixing bowl, mix flour, sugar, soda, and salt together.
  2. In separate bowl, mix egg, buttermilk, and oil together.
  3. Pour egg mixture over flour mixture.
  4. Beat with a whisk just until blended.
  5. Spray large skillet with non-stick spray.
  6. Heat skillet on medium.
  7. Using a ½ cup measuring cup or a ladle, fill with the batter.
  8. Pour onto heated skillet.
  9. Cook for about 2-3 minutes on the first side.
  10. Using a pancake turner, flip to the other side and cook about 1-2 minutes.
  11. Remove pancake to a plate.
  12. Pour batter onto skillet for the second pancake letting it cook for 1-2 minutes and flip.
  13. Repeat the cooking and flipping process until the batter is gone.
  14. Serve with butter, syrup or fruit.
