Ingredients:

 

  • 1 egg
  • 1/3 cup sugar
  • 1/4 cup oil
  • 1 cup buttermilk
  • 1 tsp. baking soda
  • 1 cup flour
  • 3/4 cup cornmeal
  • 1/2 tsp. salt
  • Maple syrup, jam, or honey

Instructions:

  1. Combine egg, sugar and 1 Tbsp. of the oil in medium  bowl.
  2. Stir in milk and baking soda.
  3. Add flour, cornmeal and salt.
  4. Stir just until ingredients are moistened.
  5. Cover. Let stand in cool place for 30 minutes.
  6. Pour remaining oil on griddle or large skillet.
  7. Heat on medium.
  8. Spoon tablespoonfuls of batter onto griddle.
  9. Brown on one side.
  10. Turn and brown on other side.
  11. Serve with syrup, jam or honey.

 

Yield: 18 cakes
