Ingredients:

 

  • 1 1/3 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1 egg
  • 1 1/4 cups milk
  • 1/4 cup molasses
  • 3 Tbsp. oil

Instructions:

  1. Stir together flour, baking powder, soda, salt, ginger, and cinnamon.
  2. In separate bowl, beat egg with milk. Add molasses, then oil.
  3. Add flour mixture to liquid mixture and stir just until combined. (Batter will be lumpy.)
  4. Grease pancake griddle and place over medium heat until a few drops of water sizzle on the griddle.
  5. Pour 1/4 cup of the batter for each pancake onto hot griddle.
  6. Cook pancakes on first side until they are puffy and full of bubbles.
  7. Turn and cook until second side is browned.
