Ingredients:

  • 1 cup boiling water
  • 1 cup chopped pitted dates
  • 1 cup chopped dried figs
  • 1/4 cup butter, softened
  • 1 1/2 tsp. baking soda
  • 1/2 cup sugar
  • 1/2 cup chopped almonds
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray loaf pan with non-stick spray.
  3. In medium mixing bowl, combine dates, figs, butter, baking soda.
  4. Stir in boiling water.
  5. Let stand for 15 minutes.
  6. Add sugar, almonds, eggs.
  7. In separate mixing bowl,  combine flour, baking powder, salt.
  8. Stir into date mixture just until blended.
  9. Pour batter into pan.
  10. Bake for 55-65 minutes or until toothpick inserted into center comes out clean.
  11. Cool 10 minutes.
  12. Turn out onto cooling rack to cool completely.
