Spray inside of Belgian waffle iron with non-stick spray.
Preheat waffle iron by plugging it in with it closed.
In large mixing bowl, combine:

  • 2 cups flour
  • 1 Tbsp. plus 1 tsp. baking powder
  • 1 Tbsp. sugar
  • ½ tsp. salt

In small mixing bowl, combine:

  • 2 eggs, beaten
  • 1 ½ cups milk
  • ¼ cup oil
  1. Add milk mixture to egg mixture.
  2. Beat with whisk or electric mixer on low, just until beaten.
  3. Scoop about ½ to ¾ cup of batter onto waffle iron.
  4. Bake for about 5 minutes.
  5. Repeat with remaining batter.
  6. Serve with sliced strawberries and powdered sugar if desired.

 

Yield:       5-6 waffles
