Ingredients:

  • 1 Tbsp. oil
  • 1 ½ cups hash brown potatoes
  • 2 Tbsp. chopped onion
  • 1 Tbsp. chopped bell pepper
  • 1 tomato or ¼ cup hot sauce
  • 4 eggs, beaten
  • ½ tsp. ground coriander
  • ½ tsp. salt

 

Instructions:

 

  1. In small skillet, sauté oil and hash browns.
  2. Cook until tender.
  3. Add onion, bell pepper and hot sauce.
  4. Sauté 3 minutes.
  5. Stir in beaten eggs, coriander and salt.
  6. Cook until eggs are set.
  7. Serve immediately with hot sauce, cheese and flour tortillas if desired.
