Ingredients:

Instructions:

  1. Saute onion and pepper in 3 Tbsp. melted butter. Set aside.
  2. Cook Scrambled eggs in 3 Tbsp. melted butter. Set aside.
  3. In 9×9-inch baking pan, make layers using half of the ingredients in each layer, in order as follows:
    • Onion and red pepper
    • Tortillas
    • Tomatoes and green chilies
    • Scrambled eggs
    • Bacon pieces
    • Cheese
  4. Cover and bake at 350 degrees for 30 minutes.

Yield: 6 servings
