Ingredients:

  • 3 Tbsp. butter, margarine or olive oil
  • 3 Tbsp. chopped onion
  • 3 Tbsp. chopped green or red pepper
  • 3 Tbsp. butter, margarine or olive oil
  • 6 eggs
  • 6 corn or flour tortillas, torn into small pieces
  • 1 can Rotel diced tomatoes and green chilies
  • 1/2 lb. bacon, cooked and crumbled
  • 3 cups grated Cheddar cheese

Instructions:

  1. Saute onion and pepper in 3 Tbsp. melted butter. Set aside.
  2. Cook Scrambled eggs in 3 Tbsp. melted butter. Set aside.
  3. In 9x9-inch baking pan, make layers using half of the ingredients in each layer, in order as follows:
    • Onion and red pepper
    • Tortillas
    • Tomatoes and green chilies
    • Scrambled eggs
    • Bacon pieces
    • Cheese
  4. Cover and bake at 350 degrees for 30 minutes.

Yield: 6 servings
