Alert message

 

  • 1 (16-oz.) pkg. frozen corn
  • ¼ cup chopped onion, optional
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • Salt and pepper to taste
  • 1 (10-oz.) can chicken broth
  • 2 cups milk
  • 2 cups grated Cheddar or Monterey Jack cheese
  • Jalapeno peppers, sliced, optional
  • Tortilla chips, crushed
  • Bacon bits

 

  1. Sauté corn and onion in butter until tender.
  2. Add flour, salt and pepper. Cook for one minute.
  3. Gradually add broth and milk, until thickened.
  4. Add cheese.
  5. Place some crushed tortilla chips in bowl.
  6. Add a serving or soup.
  7. Top with bacon bits.

 

Yield: About 8 servings.
