Pinto Beans (Dry)
Instructions:
- Sort and wash before cooking.
- Cover beans with water and soak overnight.
- Bring water to a rolling boil; then boil gently 1 to 1 ½ hours or until beans are tender.
- Add salt during last 30 minutes of cooking.
- Add hot water as needed.
Note bacon or other spices can be added after step 1.
Quick Cook Method:
- Bring 1-quart water to a rolling boil.
- Slowly stir in 1 cup rinsed beans. Do not let boiling stop.
- Reduce heat; boil gently 2 to 2½ hours or until beans are tender.
- Add salt during last 30 minutes of cooking.
- Add hot water as needed.
