Fried Rice
Ingredients:
- 1-2 teaspoons vegetable oil
- 2 cups cold cooked rice
- 1 tablespoon soy sauce
- ½ teaspoon salt
- 1 egg, slightly beaten
- ¼ cup chopped green onion
Instructions:
- Heat oil in large skillet or wok.
- Add rice, soy sauce and salt; cook, stirring constantly over moderate heat until cooked through.
- Mound rice mixture and make a “well” in the center.
- Lower heat.
- Pour eggs into the “well”. Allow to stand until the eggs are softly set. Gently stir into rice.
- Sprinkle with green onion and serve at once.
Makes 4 ½ -cup servings.
