JIMMY DEAN SAUSAGE AND CORN QUESADILLAS
Ingredients:
- 1 pkg. Jimmy Dean Hot Flavor Fresh Pork Sausage
- 11 oz. Cream cheese, softened
- ½ teaspoon cayenne pepper (optional)
- ½ teaspoon ground cumin (optional)
- 12 10-inch flour tortillas
- 8 oz. Monterey Jack cheese, shredded
- 1 can (4 ½ oz.) diced green chilies, drained
- 1 pkg. (10 oz.) frozen corn, thawed
Instructions:
- Preheat grill 5 minutes
- Unwrap sausage and pull apart into quarter-size pieces. Brown pieces on grill 2 to 3 minutes or until fully cooked. Remove from grill, crumble or chop into small pieces and set aside. If you choose to slice sausage into patties, be sure to grill them 5 to 7 minutes instead.
- Mix cream cheese with cayenne pepper and cumin, if desied, in small bowl.
- Spread cream cheese mixture evenly over 6 tortillas, leaving a 1-inch border.
- Sprinkle sausage, cheese, chilies and corn evenly over the 6 tortillas. Top with remaining tortillas; press down.
- Carefully scrape or wipe grill clean. Grill one quesadilla 2 to 3 minutes until browned and cheese is melted. Remove from grill and repeat the grilling process with remaining quesadillas. Cut each quesadilla into wedges 8 wedges and serve immediately.
